Roast Pork and Lemon.

While the temperatures continue to be bone chilling try this pork recipe.

Ingredients

Pork roast
Salt and freshly ground black pepper
Fresh rosemary
1 cup white wine
3/4 cup Ali's Lemon Ginger Marmalade

Method

  1. Preheat the oven to 180ºC.

  2. Sprinkle the pork with salt, pepper and rosemary.

  3. Pour the wine into the roasting pan.

  4. Cook 50 minutes basting regularly.

  5. Mix some pan juices with Ali's Lemon Ginger Marmalade and pour over the meat.

  6. Cook another 30 - 40 minutes, basting frequently.

  7. Slice the pork and pour pan juices over.

    Optional: If desired add favourite winter vegetables like potato, kumara, pumpkin, carrots, parsnip and leeks to the roasting pan.
