Chicken, Preserved Lemon and Pea Tagliatelle
Who doesn't love peas? Served with pasta and lemon, we are surely back in Italy! To continue the series on preserved lemons, here's a recipe you can even make with the kids - simple, delicious and oh so Italian.
Serves 4
Ingredients
1/2 barbecued chicken
500g tagliatelle or fettucine
2/3 cup frozen peas
Juice of 1/2 lemon
1/2 cup extra virgin olive oil
1 garlic clove, finely grated
2 tablespoons Ali's Preserved Lemon, chopped
1/4 cup pine nuts, toasted
Chives, to serve
Grated parmesan, to serve
Method
- Shred chicken meat, discarding the skin and bones. 
- Cook pasta in a pan of boiling salted water, adding the peas for the final 2 minutes. 
- Meanwhile, whisk lemon juice, oil and garlic together with salt and pepper in a bowl large enough to toss the pasta. 
- Drain the pasta and peas and add to the bowl, tossing until well combined. 
- Stir in chicken, preserved lemon and pine nuts. 
- Top with chopped chives and parmesan. 
 Optional: Serve with a glass of chardonnay for the adults, and Ali's Lemon Fresh with soda for the children - and those doing Dry July!
