Moroccan Chicken with Lemon and Olives
While the temperatures continue to be bone chilling try this pork recipe.
Ingredients
2 tsps paprika
1 tsp ground cumin
1 tsp ground ginger
1 tsp turmeric
½ tsp cinnamon
¼ tsp freshly ground black pepper
2 tbsps olive oil
8 pcs chicken – I use drums or thighs
Salt
3 cloves garlic, minced
1 onion, chopped
1 of Ali's Preserved Lemons -
1 cup green olives, pitted
½ cup raisins
½ cup water
¼ cup chopped fresh coriander
¼ cup chopped fresh flat leaf parsley
Method
- Combine all the spices and coat the chicken pieces well. Refrigerate and leave for an hour or longer. 
- Heat the oil in a large pan and brown chicken. 
- Remove chicken to oven proof dish. 
- Use the same pan (do not wash) to saute onion and garlic. 
- Then add lemon, olives, raisins, and water. 
- Pour onion mix over the chicken . 
- Cover and cook in oven at a low heat. - Buon appetito!!
